I thought I'd share tonight's dinner recipe with you! Enjoy ;)
Holley's Potato Cheese Soup
- 6-8 medium to large potatoes (any kind....my favorite is white or red)....peel if you prefer (I like the skin!)
- 2 cans of vegetable broth
- 1 can of chicken broth
- 1-2 cans of Cream of Celery Soup (depends on my mood!)
- 1 can Cream of Potato Soup
- 1 Bay Leaf (remove before serving!)
For every can of broth add a can of water. For every can of cream soup add a can of milk. Season to taste, bring to a rolling boil. Cook on medium for about 30 minutes until potatoes are tender. Then add the following to the pot:
- 2 cans of Campbell's Cheddar Cheese Soup
- 1 can of Campbell's Fiesta Cheese Soup
Bring to a rolling boil, then simmer til' all the cheese soup is melted in, but watch out it could burn on the bottom. Serve with warm cornbread.....YUMM-O!!!
* I've also added chopped celery and onions. And I've been know to add some butter, too ;)
